ImageBasic Rolled Biscuits (Joy of Cooking)
Preheat oven to 450 F

2 cups all-purpose flour
2 ½ teaspoons baking powder
½-1/3 teaspoon salt
6 Tablespoons of unsalted butter
¾ cup milk

  1. Mix the dry ingredients well
  2. Cut butter into the dry mix with two sharp knives, until the crumbs are smaller than peas.
  3. Add the milk and quickly mix together until the dry ingredients are attached to the batter. *Keep this mixing to the minimum to reduce toughness in the biscuit.
  4. Make biscuits the size you like (They will expand 1/3 ) and place in an un-greased baking dish, or on a cookie sheet. You can brush the tops with milk if you like a shinier surface.
  5. Bake for 10-12 minutes (Golden brown on top and deeper golden brown at the base.)

Sally Lou’s Popovers
2 eggs
1 cup milk (whole is best)
¼ t. salt
1 c. flour
1 Tablespoon olive oil

  1. Mix briskly together with a wisk
  2. Pour into a greased, pre-heated (425 F)muffin tin
  3. Bake at 425 for 20-25 minutes until medium golden brown, and taut in texture when tapped.
  4. Serve immediately
