Preheat oven to 450 F
2 cups all-purpose flour
2 ½ teaspoons baking powder
½-1/3 teaspoon salt
6 Tablespoons of unsalted butter
¾ cup milk
- Mix the dry ingredients well
- Cut butter into the dry mix with two sharp knives, until the crumbs are smaller than peas.
- Add the milk and quickly mix together until the dry ingredients are attached to the batter. *Keep this mixing to the minimum to reduce toughness in the biscuit.
- Make biscuits the size you like (They will expand 1/3 ) and place in an un-greased baking dish, or on a cookie sheet. You can brush the tops with milk if you like a shinier surface.
- Bake for 10-12 minutes (Golden brown on top and deeper golden brown at the base.)
Sally Lou’s Popovers
2 eggs
1 cup milk (whole is best)
¼ t. salt
1 c. flour
1 Tablespoon olive oil
- Mix briskly together with a wisk
- Pour into a greased, pre-heated (425 F)muffin tin
- Bake at 425 for 20-25 minutes until medium golden brown, and taut in texture when tapped.
- Serve immediately
