CEMENT: Just down the road from the Center for English as a First Language is the One and Only Solitary Way Church of the Baptized Brethren and Sistren. It's not a megachurch, although here in Underbelly, Texas, we do have one of those, The Complete and Total Faith Church of the Whole Entire World.

But back to the smaller church. It's still a sizeable building, and new, with a nice kitchen, social hall, offices, and numerous classrooms. The pastor, Sister Polly Cotton, happens to be a friend - long story - and she complained to me the other day about her arthritis. Her legs bother her, she says, because she's walking on cement all day.

Actually, she isn't. None of us walks on cement. We walk on concrete.

Cement is the powdery mixture you add water to. You mix it up, pour it and smooth it, and it sets to form concrete. That bowl of flour, water, yeast, and salt is to cement as bread is to concrete. I don't know why I used that analogy; I don't mean to drop any hints about Sister Polly Cotton's baking.

Anyway, walking on cement would be like walking on a very dusty beach. Walking on concrete, though, makes Dr. Scholl's very rich.
